Unlocking (and maybe rooting my device) to replace default apps with others.

So I got my first Android (was with WP before) so I have no idea how this all works.

The freedom of WP was uninstalling OEM apps and replacing them with better apps. That's what I want to do with my Redmi Note 3. Since my warranty doesn't disappear if I unlock my bootloader, I want to replace some apps with others of my liking.

Apps I want to remove - Apps I want to replace them with
MI Mail - Remove alltogether and just have Gmail and Outlook as email apps.
Music - Remove and replace with Groove Music
Notes - Remove and replace with OneNote
Phone - Remove and replace with Truecaller
Weather - Remove and replace with MSN Weather
MI Calender - Remove and replace with Google Calender
Play Movies - Remove altogether
Play Music - Remove altogether
Mi Gallery - Remove and replace with Google Photos
Mi Camera - Remove and replace with Google Camera
Hangouts - Remove altogether
Mi Video Player - Remove and replace with VLC

I am not sure if this can be done but I want to keep MIUI but remove its launcher and use action launcher or any other launcher instead.

I know I can set defaults but just for my relief (and freeing up space) I want to completely replace the above apps with others.

Question is

I have no idea about Unlocking, doesn't mean I shouldn't. I heard XDA is the best website for modding. so I came here.

How do I unlock my device and do the above stuff?
Do I also need to root to do all that?
Will I lose any files after unloocking the bootlader?
Will I still receieve MIUI updates after doing all that?
What else do I need to know that unlocking the bootloader (and rooting) will affect the way my device operates?

After doing all this, I would like to secure my device again (as rooting and unlocking crumbles the security and privacy of the phone). So how can I unroot my device (if rooting is needed) and then lock my bootloader again with all the changes intact?
